Chicken & Dumplings
This soup is great for those cold days! It is a great comfort food in our house.
- 1 whole chicken
- 1 cup carrots
- 1 cup celerry
- 1 cup frozen peas
- 1 cup minced onion
- 2 tb garlic powder
- 1 tsp black pepper
- 1 Dumpling mix see box for instructions
Clean the whole chicken. Put the chicken in a pot filled with water (water filled just over the chicken). Chop up the carrots, celery and onion in bite size pieces. Put all of the ingredients in the pot. Boil the pot on high for 30-45 minutes (until chicken skin scrapes off easily). De-bone the chicken.
Place the chicken mixture and soup on the stove on high heat for 10 minutes (or until it boils). In the meantime, make the dumplings. I use Bisquick but you can use any mix. Follow the instructions on the box. Then place the dumplings in the boiling soup. Boil on high for 15 minutes uncovered and 15 minutes covered. Then serve them in a bowl.
