
Meghan, Duchess of Sussex, Ginger Berry Crumble
Lauren Lazell from Young Actor’s House stopped by to bake Meghan, Duchess of Sussex, Ginger Berry Crumble with me. I found this recipe at CookingLight.com. I thought it was timely to make this since Lauren actually had Meghan sitting in her casting office a decade ago! I made a few changes to this recipe. The recipe ended up turning into more of a parfait instead of actual bars. Maybe that is why it is a crumble? Hmmm.....

Ingredients
Filling:
- 2 cups blue berries
- 2 cups blackberries
- ½ tsp vanilla extra extract
- 2 tsp lemon juice (Kristin added lemon zest)
- 1 tb agave sweetener (instead of maple syrup)
- 1 tsp freshly grated ginger
Topping:
- 2 ½ cups rolled oats
- 5 tb honey
- 2 tsp cinnamon
- 5 tb almond flour
- ½ tsp vanilla extract
- 1 tsp flaxeed
- 4 tb coconut oil (ristin used canola oil)
Optional:
- 4 tb Greek yogurt
Instructions

Heat up the oven to 350 degrees. Combine the filling ingredients in one bowl and then transport into a baking dish. Take the same bowl (save on dishes) and mix together the topping. Then put the topping on top of the mixture in baking dish. Put it in the oven for 30 minutes. Since this crumbled, literally, I added Greek yogurt to my dish first and then put the crumble on top. It ended up tasting quite good!
